Low Carb Waffles with Blueberries


Fidget For Fitness' Low Carb Almond / Coconut Flour Waffles with Blueberries ½ c. coconut flour ½ c. almond flour 1 tsp. baking soda 1 tsp. baking powder ½ c. buttermilk ½ c. heavy cream + 2 T. 4 T. melted butter 4 eggs 1 T. grape seed oil 2 individual size packets of Splenda 1 T. vanilla extract ½ tsp. cinnamon ¼ tsp. nutmeg Pinch of salt 3/4 c. fresh blueberries (optional) Pam cooking spray Sugar Free Maple syrup for topping Waffle Iron 1. Preheat waffle iron 2. Spray waffle Iron with Pam cooking spay 3. In a large bowl combine coconut flour, almond flour, baking soda, baking powder, Splenda, salt, cinnamon and nutmeg 4. In medium bowl, beat 4 eggs. Add grape seed oil, buttermilk, heavy cream, melted butter, and vanilla and whisk until well blended. 5. Pour wet ingredients into dry ingredients and whisk until batter is smooth without lumps 6. Fold in blueberries (optional) 7. Spoon batter into waffle iron and cook until done Serve with butter and sugar free maple syrup Makes 3 round waffles
