Puto cheese is just like the regular puto or rice cake. But this version uses flour instead of ground rice so the texture is a whole lot smoother. And the cheese added as topping is the reason why it is named as such. Puto cheese and hot chocolate is a great combination for breakfast. Because it is very easy to prepare, you don't have to be a seasoned chef to cook this recipe to perfection.

Ingredients:
1/2 cup cake-flour 1/2 cup all purpose-flour 2 tsp baking powder 3/4 cup white sugar (divided) 1/3 cup evaporated milk 1/3 cup water 2 pcs egg yolks 2 pcs egg whites 1/4 tsp. vanilla 1/2 tsp salt cheese (sliced into small strips)

Cooking Instructions:
In a medium-sized mixing bowl, sift the cake flour, all-purpose flour, salt and baking powder. Repeat the step three times then set aside. Beat yolks until the color is lemon yellow. Gradually add ½ cup sugar while beating continuously. Fold in the flour mixture, alternately with milk and water, to the beaten egg yolks. Add the vanilla and mix thoroughly. Set aside. Beat egg whites until soft peaks are formed. Add the remaining ¼ cup sugar and go on beating the mixture until stiff. Fold in the egg batter. Mix well and pour mixture in puto molder about ¾ full. Top with slices of cheese. Cover with clean cheese cloth. Steam for 25-30 minutes. You will know the puto cheese is cooked when you insert a tester in the center and it comes out clean. To retain the solid shape of the puto cheese, let cool for a few minutes before removing from the puto molds.

Use your oven on cool or cold days to make dinner and bake dessert at the same time. Your kitchen will feel cozy and the aromas will waft throughout your house. As your family members enter the house you will hear, "Something sure smells good in here," or something similar. This stew is very tasty with the flavors of V-8 juice and dry onion soup mix giving it a slightly different twist. The Oven Beef Stew bakes at 350 degrees for 3 hours. While it is baking, mix up the Easy Pineapple Cake and let it bake beside the stew.

OVEN BEEF STEW

This is an old recipe from my childhood in Southern Indiana.

1 lb. cubed stew beef
1 large onion, sliced
1 cup sliced potatoes
1 cup sliced carrots
1 cup sliced celery
1 can sliced mushrooms, drained
2 large cans V-8 juice
1 pkg dry onion soup mix
1 tbsp instant tapioca
1 tbsp sugar
1 tbsp salt
1 tbsp pepper

Preheat oven to 350 degrees.

Place beef in the bottom of a large roasting pan. Layer the vegetables over the beef. In a mixing bowl, mix together the juice, soup mix, tapioca, sugar, salt and pepper. Pour the mixture over the vegetables. Cover the roasting pan and bake at 350 degrees for about 3 hours.

1 large can crushed pineapple with juice
1 box white or yellow cake mix
1 cup chopped pecans or hickory nuts
1 stick butter
powdered sugar, if desired

Heat oven to 350 degrees. Grease an oblong cake pan. Pour undrained pineapple into the greased pan. Sprinkle the dry cake mix over the pineapple and smooth down. Sprinkle nuts over the batter. Cut the stick of butter into small pieces and dot over the batter. Bake at 350 degrees for 1 hour. No need to frost this cake. Sprinkle with powdered sugar, if desired.

Mark Bittman - Potato Pancakes

Potato 'nik' and latkes Mark Bittman 4 to 6 servings, Time: About 40 minutes INGREDIENTS • About 2 pounds starchy potatoes, like Idaho or russet, peeled • 1 medium onion, peeled • 2 eggs, beaten • 2 tablespoons bread crumbs or matzo meal • Salt and freshly ground black pepper • Neutral oil, like grapeseed or corn, as needed DIRECTIONS Potato 'nik' 1. Grate the potatoes and onion by hand or with the grating disk of a food processor; drain well in a colander or strainer. Combine the potatoes and onion in a large bowl with the eggs and bread crumbs; sprinkle with salt and pepper. 2. Put about 1/8 inch of oil in a large, deep skillet, preferably nonstick or cast-iron, over medium-high heat. When the oil is hot (it will shimmer), put the batter into the pan and smooth the top. Cook, shaking the pan occasionally, until the bottom is nicely browned, at least 15 minutes, adjusting the heat so the mixture sizzles but doesnt burn. 3. To turn, slide the cake out onto a large plate, cover with another large plate, and invert the 2 plates together. Add a little more oil to the pan if necessary and slide the pancake back in, cooked side up. Cook for another 15 minutes or so, until nicely browned, then serve hot or warm. Latkes (Potato Pancakes) The original: Prepare the potato batter in Step 1 and heat the pan as described in Step 2. Back to Basics: Buttermilk Pancakes

Note: 7/4/11--I made this using buttermilk by making it with milk + lemon juice as I didn't have any buttermilk and the results were not good. They weren't flufy, nor were they as tasty. Use buttermilk. I got this recipe from: bakingbites.com Buttermilk Pancakes 1 cup all purpose flour 1 tsp baking powder 1/4 tsp baking soda 1/4 tsp salt 1 tbsp sugar 1 cup buttermilk 2 tbsp milk 1 large egg In a medium bowl, whisk together flour, baking powder, baking soda, salt and sugar. In a small bowl, whisk together the buttermilk, milk and egg until well combined, then pour into the dry ingredients, whisking until just combined. It is ok for the batter to be slightly lumpy. Heat a skillet or griddle over high heat until a drop of water placed on it skitters around the surface. It's too hot if the water evaporates instantly on contact. Drop by large spoonfuls (to make desired size) into the preheated pan and cook until golden on both sides, turning once. Serve immediately. Recipe can be doubled. This was a VERY good recipe. It will replace the one that I had been using. Very fluffy, delicious pancakes. Yummy nom nom.

To prepare pancakes, you need to start by making the pancake batter. Get a good recipe that is fairly simple to follow, and start measuring out all the ingredients. Follow the instructions on how to mix it all together and you get your batter.

When the better is set, you can finally cook up your pancakes. Just pour out the batter onto the pan, cook, flip, cook some more, and enjoy. That's pretty easy, right? Nothing to it.

Cooking pancakes isn't exactly a science, but you couldn't cook them any which way you want, either. For example, you aren't supposed to bake pancakes. Why not? Because they just wouldn't turn out right. Sticking them in the oven, you wouldn't get the kind of pancakes you're looking for.

If you poured the batter into hot oil and fried it would it still be pancakes? Of course not! In that case, it would be fried dough. And even more, it wouldn't be able to be called 'pan' cakes anymore.

What type of pan should you cook your pancakes on? Technically, you could use a skillet or frying pan to make them and it would work, but it probably would be a little difficult. You could even use a wok if you really wanted to, but you'd have trouble.

A griddle will be the best pan to use. It is almost like the griddle was made just for making pancakes, that's how perfect it is. Get a big one or small one, one fore the stove or an electric griddle.

Electric or stove top griddles are perfect for making pancakes. It's so easy to use them to flip the pancakes over and out of the pan. Use whatever shape you want that will fit your needs.

Electric griddles are great space saving pans. If you cook a lot at once and need the stove, an electric griddle gives you more cooking space on the counter. It is a great use for pancakes.

Everybody loves pancakes, right? They are a delicious food that allow you to have cake for breakfast. It is not often that you get to eat dessert as a meal, and pancakes is one of those. Have you ever made pancakes yourself? If so, how did they come out?

The problem with making pancakes is that they are not actually the easiest things to make. You can get great pancakes or you can get flat pancakes, tough pancakes, lack pancakes, gooey pancakes, etc. Of course, you want great pancakes, but there are several things you need to keep in mind. If you want to make fluffy ones, you have to follow these steps.

First of all, if the recipe calls for the flowers to be sifted, make sure you set it. Most often these recipes to call for sifted flour. If the flour is not sifted, it will develop lumps which will make them less likely to be fluffy.

Also, when you mix the wet ingredients into the dry ingredients, make sure you mix them very gently and only until combined into a batter. If there a fuel lumps, that is okay. It is better to have lumps then tough pancakes. Over beating the pancake batter will make a tough batter which turns into a tough pancake. Tough pancakes are not fluffy pancakes.

Finally, make sure you cook the pancakes on a hot griddle that is lightly greased. Wait until tiny bubbles form across the top. That is when they are ready to flip and that is what makes them light and fluffy. Pancakes are supposed to be fluffy.
